Cured cheese with a semi-hard or semi-soft consistency, slightly yellowish, with some small holes, obtained by draining the curd after coagulation of raw milk, unripe by the action of cardoon infusion. It has a pleasant aroma and a slightly sweet milky taste. The cardoon gives it a final bitter touch.
