Ewe Reserve
Cured cheese with a closed body and texture, slightly brittle and dry consistency, unctuous appearance, obtained by draining the curds after coagulation of raw milk under the action of a thistle infusion. Its taste is pleasant, strong, persistent, and slightly spicy. Intense flavour of spices, nuts and toast.
