Cured cheese with semi-hard consistency, with few eyes irregularly distributed in the body, matte-white colour. Obtained by exhausting the curd after coagulation of raw milk by the action of animal rennet. Covered in brown food colour. Strong flavour, with final notes of toast, apple and violets.
